This version uses apples, apple juice, red wine vinegar and redcurrant jelly for a balanced glaze that is bright rather than heavy. 🥬✨ Yield: 6-8 side servings Time: 15 minutes prep, 55-65 minutes braising Ingredients 🛒 - 1 medium red cabbage, about 900 g, finely shredded - 2 crisp apples, peeled if preferred, cored and thinly sliced - 1 medium red onion, finely sliced - 2 tbsp butter or olive oil - 2 tbsp red wine vinegar - 180 ml apple juice or cloudy apple cider - 2 tbsp redcurrant jelly, cranberry sauce or berry jam - 1 tbsp light brown sugar, optional if the apples are sharp - 4 whole cloves - 1 bay leaf - 1/2 tsp fine salt, plus more to taste - 1/4 tsp black pepper - Optional finish: 1 tsp lemon juice, 1 tsp extra butter, chopped parsley, toasted walnuts or roast sausages for serving Method 🍳 1. Melt the butter in a wide heavy pan over medium heat. Add the onion with a pinch of salt and cook for 5-6 minutes, stirring often, until the onion looks glossy and softened but not browned. 2. Add the shredded red cabbage and sliced apples. Turn everything through the buttery onion for 4-5 minutes. The cabbage should begin to wilt, darken slightly and pick up the pan juices. 3. Pour in the red wine vinegar and apple juice. Stir in the redcurrant jelly, brown sugar if using, whole cloves, bay leaf, salt and pepper. Bring the pan to a gentle simmer, then reduce the heat to low. 4. Cover and braise for about 40 minutes, stirring every 10 minutes so the cabbage cooks evenly. If the pan ever looks dry, add a small splash of water or apple juice. You want moist braising, not boiling. 5. Remove the lid and cook for 10-15 minutes more. The cabbage should be tender and silky, the apple should almost melt into it, and the liquid should reduce to a glossy spoon-coating glaze. 6. Remove the cloves and bay leaf. Taste carefully. Add a little lemon juice or an extra splash of vinegar if it needs brightness, or a small knob of butter if you want a softer shine. Adjust salt at the end.
