A glossy apple-rosemary table jelly turns crisp sourdough and creamy cheese into a snack that feels special but still very doable. It is sweet, sharp, herbal, and perfect for cheese boards, roast meats, or a quick toast plate.

For the apple-rosemary jelly:
- 4 medium tart-sweet apples, roughly chopped
- 1 cup water
- 1/2 cup granulated sugar
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 2 small rosemary sprigs, plus extra to finish
- 1 thin strip lemon peel
- 1 small pinch fine salt
For the toasts:
- 6-8 slices sourdough or country bread
- 180 g soft goat cheese, ricotta, cream cheese, or whipped feta
- 2 tbsp toasted walnuts or hazelnuts, chopped
- Thin apple slices, optional
- Black pepper and flaky salt, to finish
- A little honey, optional if your apples are very tart

1. Make the apple base. Put the apples, water, sugar, lemon juice, vinegar, rosemary, lemon peel, and salt into a saucepan. Bring to a lively simmer, then reduce the heat and cook for 18-22 minutes, stirring now and then, until the apples collapse and the liquid smells herbal and bright.
2. Strain for a clear jelly. Pour the mixture through a fine sieve into a clean pan. Press lightly for flavor, but do not force too much pulp through if you want a glossier finish. Discard the rosemary and lemon peel.
3. Reduce to a spoonable set. Simmer the strained liquid for 8-12 minutes, until it looks shiny and lightly syrupy. Drop a little onto a cool plate: it should thicken as it cools but still move slowly when tilted. If it gets too thick, loosen with a teaspoon of hot water.
4. Cool briefly. Let the jelly stand for 10-15 minutes. It will keep setting as it cools, so stop while it is still slightly looser than you want.
5. Build the toasts. Toast the sourdough until the edges are crisp and the center is golden. Spread generously with soft cheese. Spoon over the warm or chilled apple-rosemary jelly.
6. Finish and serve. Add walnuts, thin apple slices, extra rosemary, black pepper, and a tiny pinch of flaky salt. A little honey is lovely if you want a sweeter cheese-board feel. Serve straight away so the toast stays crisp. โจ
