Blackberry Balsamic Goat Cheese Toasts

Ingredients
- 4 thick slices sourdough or rustic country bread
- 1 to 2 teaspoons olive oil, for brushing or pan-toasting
- 140 g soft goat cheese, at room temperature
- 2 tablespoons Greek yogurt, cream cheese, or creme fraiche
- 1 teaspoon honey, plus extra for finishing
- 1 teaspoon lemon juice, optional, for a brighter cheese spread
- 1 cup fresh blackberries, patted dry
- 1 tablespoon balsamic glaze, plus more if needed
- 10 to 14 small basil leaves, torn only if large
- Flaky salt
- Freshly cracked black pepper
- Optional: lemon zest, chopped pistachios, toasted walnuts, thyme, or a few chili flakes
Method
- Toast the bread. Brush sourdough lightly with olive oil. Toast in a hot skillet, grill pan, or oven until the edges are deeply golden and crisp but the center still has a little chew. This usually takes 2 to 3 minutes per side in a skillet or 7 to 9 minutes in a 200C / 400F oven.
- Make the whipped goat cheese. Stir or whip goat cheese with Greek yogurt, honey, pepper, and a tiny pinch of salt until spreadable and creamy. Add lemon juice if the cheese tastes too rich or needs lift.
- Prepare the berries. Keep blackberries whole for the cleanest look. If some are very large, halve only a few so their juice lightly stains the cheese without making the toast soggy.
- Assemble while the toast is warm. Spread a thick layer of goat cheese over each toast. Add blackberries, basil, a thin drizzle of balsamic glaze, a tiny drizzle of honey, flaky salt, and cracked pepper.
- Serve right away. The best texture is warm crisp toast plus cool creamy cheese. If serving on a board, keep the glaze drizzle light and offer extra on the side.
