Chilled Peach Cucumber Farro Bowls with Mint Feta 🍑🥒
A cool, bright grain bowl for warm days: chewy farro, juicy peach slices, crisp cucumber ribbons, salty feta, toasted almonds and a lemon-honey dressing that pulls everything together. Fresh, practical and easy to prep ahead. 🌿

Ingredients
For the bowls:
- 1 cup dry farro, rinsed
- 3 cups water or light vegetable stock
- 1/2 tsp fine sea salt, plus more to taste
- 2 ripe but firm peaches, thinly sliced
- 1 large cucumber, shaved into ribbons or thin half-moons
- 120 g / 4 oz feta, crumbled
- 1/3 cup toasted almonds, roughly chopped
- 1/2 cup fresh mint leaves, torn
- 2 tbsp chopped parsley or basil, optional
- Freshly ground black pepper
For the lemon-honey dressing:
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 1/2 tsp runny honey
- 1 tsp Dijon mustard
- 1 small garlic clove, finely grated
- Pinch of sea salt
- A few grinds of black pepper
Method
1. Cook the farro. Put the farro, water or stock and 1/2 tsp salt in a saucepan. Bring to a boil, then simmer for 18-25 minutes, depending on the grain, until tender but still pleasantly chewy. Drain well and spread on a tray for 10 minutes so the steam escapes.
2. Make the dressing. Whisk olive oil, lemon juice, lemon zest, honey, Dijon, garlic, salt and pepper until glossy. Taste it: it should be bright, lightly sweet and a little sharp because the farro will soften the flavour.
3. Season the grains. Toss the warm or room-temperature farro with about half the dressing. Let it stand for 10 minutes so the grains absorb the lemon-honey flavour instead of tasting plain underneath the toppings.
4. Build the bowls. Fold in the peach slices, cucumber, feta, toasted almonds and mint. Be gentle so the peaches stay pretty and the feta keeps some texture. Add more dressing a spoonful at a time until the bowl looks lightly glossy, not wet.
5. Finish and serve. Add extra mint, black pepper and a little more lemon zest. Serve cool or at room temperature. If chilling, cover for 20-30 minutes, then refresh with a squeeze of lemon before serving.

- Spoon over baby spinach or rocket for a greener lunch bowl.
- Serve beside flatbreads, soup or a simple omelette.
Storage tips
The dressed farro keeps well for up to 3 days in the fridge. For best texture, store cucumber, peaches, mint and almonds separately and fold them in just before eating. If everything is already mixed, add a few fresh cucumber slices and a little lemon juice to wake it back up.
