Creamy, chilled dessert cups with espresso-soaked biscuit pieces, soft mascarpone cream, glossy apricot compote, almond macaroon crunch, and a little cocoa on top. They feel tiramisu-adjacent, but brighter and fruitier - a useful make-ahead dessert for Sunday lunch, small dinner parties, or a quiet coffee treat.

Ingredients 📝
- 150 g dried apricots, chopped, or 250 g fresh ripe apricots, pitted and diced
- 3 tbsp honey or maple syrup, plus more to taste
- 1 tsp finely grated orange zest
- 2 tbsp orange juice or water
- 1/2 tsp vanilla extract
- Small pinch of salt
- 250 g mascarpone
- 120 g thick Greek yogurt
- 1-2 tsp icing sugar or honey, optional, for the cream
- 120 ml strong espresso or very strong coffee, cooled
- 10-12 crisp plain biscuits, sponge fingers, or shortbread biscuits, broken into bite-size pieces
- 35 g amaretti, almond macaroons, or almond biscuits, crushed into coarse crumbs
- 1 tsp cocoa powder, for dusting
- Toasted almonds or extra orange zest, optional, to finish
Method 🍽️
1. Make the apricot compote. Put the apricots, honey, orange zest, orange juice or water, vanilla, and a small pinch of salt into a small pan. Simmer gently for 6-8 minutes for dried apricots, or 3-5 minutes for fresh apricots, until glossy and spoonable. Add a splash more water if it catches. The texture should be jammy but not stiff. Cool for 10 minutes.
2. Mix the cream. Whisk the mascarpone and Greek yogurt together until smooth and softly spoonable. Taste, then add 1-2 teaspoons icing sugar or honey only if you want it sweeter. Keep the cream thick enough to hold layers, but not so stiff that it feels heavy.
3. Prepare the biscuit layer. Pour the cooled espresso into a shallow bowl. Dip each biscuit piece for just 1-2 seconds. You want coffee flavor and softness, not a soggy base.
4. Layer the cups. Add a small spoonful of mascarpone cream to each glass, then a few espresso-dipped biscuit pieces, then apricot compote. Repeat once more, finishing with cream and a visible spoonful of apricot on top.
5. Chill. Refrigerate for at least 30 minutes, or up to 8 hours. If making them far ahead, add the final crunchy topping just before serving.
6. Finish. Scatter over crushed almond macaroons, dust lightly with cocoa, and add orange zest or toasted almonds if you like. The best bite should be creamy, coffee-soft, fruity, and crisp all at once. ✨
