Cranberry Apple Pear Filo Parcels

Ingredients

  • 8 sheets filo pastry, thawed if frozen
  • 70 g unsalted butter, melted
  • 160 g fresh or frozen cranberries
  • 1 medium apple, peeled, cored and diced small
  • 1 ripe but firm pear, peeled, cored and diced small
  • 3 tablespoons honey, plus 1 tablespoon for glazing
  • Zest of 1 orange
  • 1 tablespoon orange juice
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger, optional
  • Small pinch of fine salt
  • 35 g toasted almonds, roughly chopped
  • 1 teaspoon cornflour mixed with 1 teaspoon cold water, only if the fruit is very juicy
  • Icing sugar, yogurt, cream or vanilla ice cream, to serve

Method

  1. Heat the cranberries, apple, pear, honey, orange zest, orange juice, lemon juice, cinnamon, optional ginger and salt in a small pan. Cook for 6-8 minutes, stirring often, until the cranberries burst and the apple and pear soften but still have shape.
  2. If the fruit mixture looks loose, stir in the cornflour slurry and simmer for 30-60 seconds until glossy and thick. The filling should mound on a spoon without running.
  3. Transfer the filling to a shallow dish and cool fully. Stir in the toasted almonds once cool so they stay crunchy.
  4. Heat the oven to 190 C / 375 F. Line a baking tray with parchment. Keep filo sheets covered with a clean towel while working so they do not dry out.
  5. Lay one filo sheet on the work surface and brush lightly with melted butter. Top with a second sheet, brush again, then cut lengthways into two long strips.
  6. Spoon a compact tablespoon of cooled filling near one end of each strip. Fold one corner over the filling to form a triangle, then keep folding the triangle along the strip. Place seam-side down on the tray. Repeat with the remaining pastry and filling.
  7. Brush the tops with butter and bake for 16-20 minutes until the parcels are crisp, flaky and deep golden at the corners.
  8. Warm the extra honey for a few seconds and brush or drizzle it lightly over the hot parcels. Rest 5 minutes before serving so the filling settles.
