Crispy Black Garlic Red Pepper Butter Bean Toasts with Rosemary Lemon Yogurt 🫑🌿 This is a crisp, creamy toast recipe with a lot of reward for very little work: crunchy olive-oil bread, mashed butter beans scented with black garlic, sweet roasted red peppers, and a cold rosemary lemon yogurt spooned on at the end. It works as a fast lunch, a snack board, or a light dinner with salad. The key is keeping the bread properly crisp and adding the yogurt only when you are ready to eat. ✨ Yield: 4 generous toasts Time: about 25 minutes Ingredients: - 4 thick slices sourdough or country bread - 2 tbsp olive oil, plus extra to finish - 1 x 400 g can butter beans, drained and rinsed - 2 black garlic cloves, mashed to a paste - 1 small fresh garlic clove, finely grated, optional - 1 tbsp lemon juice - 1 tsp lemon zest, plus extra to finish - 1/2 tsp ground cumin - 220 g roasted red peppers from a jar, drained and sliced - 1 tsp chopped rosemary, plus a few tiny leaves to finish - Pinch of chilli flakes - 140 g thick Greek yogurt - 1 tbsp chopped parsley - 1-2 tsp water, only if needed to loosen the yogurt - Fine salt and black pepper Method: 1. Heat the oven to 220 C / 425 F, or use a grill pan. Brush the bread on both sides with olive oil and toast until the edges are deeply crisp and the centre is still a little chewy. In the oven this usually takes 8-10 minutes, turning once. 2. Put the butter beans in a bowl and mash roughly with the black garlic, optional fresh garlic, lemon juice, lemon zest, cumin, 1 tbsp olive oil, salt and pepper. Keep some beans partly whole so the topping has texture. Taste it: it should be savoury, lemony and gently sweet from the black garlic. 3. Warm the roasted red peppers in a small pan with a splash of olive oil, chopped rosemary, chilli flakes and black pepper for 3-4 minutes. You are not cooking them heavily, just waking up the rosemary and making the peppers glossy. 4. Stir the Greek yogurt with parsley, a little finely chopped rosemary, a squeeze of lemon and a pinch of salt. Add 1-2 tsp water only if it is too thick to spoon. Keep it cold and bright. 5. Spread the black garlic beans thickly over the crisp toast. Add warm red peppers, then spoon over small dollops of rosemary lemon yogurt. Finish with lemon zest, rosemary leaves, black pepper and a thin drizzle of olive oil. Serving and storage: Serve immediately while the toast is crisp. For a fuller plate, add cucumber, rocket, cherry tomatoes or a simple green salad. The bean mash and yogurt can be made up to 2 days ahead and kept covered in the fridge.
