Ingredients
For the waffle bites:
- 2 cups finely chopped cauliflower florets
- 1 can chickpeas, drained, rinsed and patted very dry
- 1/2 cup chickpea flour
- 1 large egg
- 2 tablespoons olive oil, plus more for brushing the waffle iron
- 2 tablespoons chopped parsley or mint
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fine salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon chilli flakes, optional
- 3 tablespoons toasted almonds, chopped, to finish
- Lime zest and extra herbs, to finish
For the apricot lime yogurt:
- 1 cup thick Greek yogurt
- 2 tablespoons apricot jam or finely chopped soft dried apricots
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 teaspoon olive oil
- Tiny pinch of ground cardamom
- Pinch of salt
Method
1. Prep the base. Chop the cauliflower very small, almost like coarse rice. Pat it dry with kitchen paper if it feels wet. Mash the chickpeas in a bowl until half creamy and half chunky, leaving some texture for bite. π₯£
2. Mix the batter. Add cauliflower, chickpea flour, egg, olive oil, herbs, cumin, cardamom, garlic powder, salt, pepper and optional chilli flakes. Stir until the mixture holds together when pressed. Rest for 8-10 minutes so the chickpea flour hydrates.
3. Heat and oil the waffle iron. Heat a waffle iron until fully hot, then brush both plates lightly with olive oil. Add small spoonfuls of mixture with space between them, press gently and cook for 5-7 minutes, until the bites are deeply golden and release cleanly. Do not lift too early or they can tear.
4. Keep them crisp. Transfer finished bites to a rack instead of a plate, and keep them in a low oven while you cook the rest. This keeps the edges crisp rather than steamy.
5. Make the yogurt. Stir Greek yogurt with apricot jam, lime juice, lime zest, olive oil, cardamom and salt. Taste and adjust with more lime for brightness or a tiny extra spoon of apricot for sweetness. π
