Crispy Cumin Carrot Black Bean Millet Bowls with Lime Herb Yogurt 🥕🌿
This is a cozy bowl dinner with a lot of contrast: sweet roasted carrot batons with crisp browned edges, glossy cumin-scented black beans, fluffy millet and a cold lime herb yogurt that makes the whole bowl feel fresh instead of heavy. Add pumpkin seeds at the end for crunch and a little extra richness. 🧡

Ingredients:
- 700 g carrots, scrubbed and cut into thick batons
- 2 tbsp olive oil
- 1 1/2 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander, optional
- 2 cans black beans, drained and rinsed
- 1 small garlic clove, finely grated
- 1 tsp lime zest
- 2 tbsp lime juice, divided
- 3 cups cooked millet, warm
- 3-4 tbsp pumpkin seeds
- Small handful coriander or parsley leaves
- Salt and black pepper
Lime herb yogurt:
- 1 cup thick Greek-style yogurt
- 1 small garlic clove, finely grated
- 1 tbsp lime juice
- 1 tsp lime zest
- 2 tbsp finely chopped coriander or parsley
- 1 tsp olive oil
- Pinch of salt
Method:
1. Heat the oven to 220 C / 425 F. Line a large tray with baking paper. Toss the carrot batons with olive oil, 1 tsp cumin, smoked paprika, coriander if using, salt and black pepper. Spread them out well so they roast rather than steam.
2. Roast for 24-30 minutes, turning once, until the carrots are tender inside and browned at the edges. If the tray is crowded, use two trays for better crisping.
3. Meanwhile, warm the black beans in a small pan with the garlic, remaining 1/2 tsp cumin, lime zest, a pinch of salt and 3-4 tbsp water. Simmer gently for 5-7 minutes until glossy. Stir in 1 tbsp lime juice at the end. 🌶️
4. Stir the yogurt with garlic, lime juice, lime zest, chopped herbs, olive oil and salt. Taste and add more lime if you want it brighter.
5. Fluff the warm millet with a fork. Season it lightly with salt, pepper and the remaining lime juice.
6. Build the bowls: millet first, then cumin black beans, roasted carrot batons, a generous spoon of lime herb yogurt, pumpkin seeds and fresh herbs. Finish with extra black pepper or a tiny drizzle of olive oil if you like.
Texture and timing tips:
- Cut the carrots thick enough that they stay soft in the middle while the edges brown.
- Keep the beans gently saucy, not dry. A splash of water makes them glossy and helps them cling to the millet.
- Add the yogurt at the table or just before serving so the hot vegetables keep their texture.
- Millet can be cooked ahead; rewarm it with a splash of water and fluff before building the bowls.
Storage:
- Store carrots, beans, millet and yogurt separately for up to 3 days.
- Reheat the carrots on a tray or in a dry pan to bring back the edges.
- The yogurt also works as a dip for flatbreads or roasted potatoes.
