Crispy Juniper Mushroom Rye Dumplings with Pickled Cranberry Yogurt 🍄🌿
These little dumplings are crisp on the outside, tender in the middle and deeply savoury from browned mushrooms, rye flour and a tiny hint of crushed juniper. The pickled cranberry yogurt cuts through the richness with a sharp, creamy, pink spoonful, so the plate feels cosy but still fresh. They work as a vegetarian starter, a brunch plate, or a light dinner with bitter leaves and lemon. ✨

Ingredients
For the mushroom rye dumplings:
- 350 g mixed mushrooms, finely chopped
- 1 small shallot, finely chopped
- 2 garlic cloves, finely grated
- 2 tablespoons olive oil, plus more for frying
- 1 teaspoon thyme leaves
- 3 juniper berries, finely crushed, or use a small pinch only
- 250 g ricotta, farmer cheese or well-drained cottage cheese
- 1 large egg
- 1/2 cup rye flour, plus extra for dusting
- 1/3 cup fresh breadcrumbs
- 1 teaspoon lemon zest
- 3/4 teaspoon fine salt, plus more to taste
- 1/4 teaspoon black pepper
For the pickled cranberry yogurt:
- 3/4 cup cranberries, fresh or frozen
- 2 tablespoons red wine vinegar or apple cider vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon lemon juice
- 1 cup thick Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon chopped dill, parsley or chives
- Salt and black pepper, to taste
To serve:
- Bitter leaves, rocket or shredded chicory
- Lemon wedges
- Extra herbs
- Toasted breadcrumbs or chopped walnuts
Method
1. Brown the mushrooms. Warm 1 tablespoon olive oil in a wide pan. Add the mushrooms with a pinch of salt and cook for 8 to 10 minutes, stirring often, until their moisture evaporates and the pieces turn browned and concentrated. Add the shallot, garlic, thyme and crushed juniper, then cook for 2 minutes more. Let the mixture cool for 5 minutes.
2. Mix the dumpling base. In a bowl, combine ricotta, egg, rye flour, breadcrumbs, lemon zest, salt and pepper. Fold in the cooled mushrooms. The mixture should be thick and sticky, not wet. If it slumps heavily, add 1 to 2 tablespoons more breadcrumbs and wait a few minutes so they hydrate.
3. Chill for structure. Cover the bowl and chill for 20 minutes. This short rest lets the rye flour absorb moisture and makes the dumplings easier to shape without adding too much flour.
4. Pickle the cranberries. Put cranberries, vinegar, honey and lemon juice in a small pan. Simmer for 4 to 6 minutes until the berries soften but still hold some shape. Cool until just warm, then fold half into the Greek yogurt with olive oil, herbs, salt and pepper. Keep the rest for spooning over the top.
5. Shape the dumplings. Scoop heaped tablespoons of the chilled mixture onto a tray. Dust your tools and the tray lightly with rye flour, then shape each scoop into a small oval or round dumpling. Use just enough flour to prevent sticking; too much will make the surface dry.
6. Pan-sear until crisp. Heat a thin layer of olive oil in a non-stick or well-seasoned pan over medium heat. Cook the dumplings in batches for 3 to 4 minutes per side, turning gently, until deeply golden with crisp edges and a tender centre. If they brown too fast, lower the heat so the inside warms through.
7. Serve while warm. Spoon pickled cranberry yogurt onto plates, add the crisp dumplings, then finish with extra cranberries, herbs, toasted crumbs or walnuts, and lemon wedges. The best bite has a hot mushroom-rye centre, a crisp golden edge and cold tangy yogurt. 🍽️
