Crispy Miso Mushroom Barley Bowls with Pickled Cucumber Yogurt 🍄🥒
This is a cozy grain bowl with a bright finish: chewy pearled barley, deeply roasted miso mushrooms, cool cucumber yogurt and a quick sesame-scallion crunch. It feels hearty enough for dinner, but the yogurt and lime keep it fresh.

Ingredients:
For the bowls:
- 1 cup pearled barley, rinsed
- 3 cups water or vegetable stock
- 500 g / 1 lb mixed mushrooms, torn or thickly sliced
- 1 1/2 tbsp white miso
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- 1 tsp rice vinegar or lime juice
- 1/2 tsp smoked paprika
- Black pepper
- 2 scallions, thinly sliced
- 2 tbsp toasted sesame seeds
- Small handful of coriander, dill or parsley
- Lime wedges, to serve
For the pickled cucumber yogurt:
- 1 small cucumber
- 1 cup thick plain yogurt
- 1 tbsp lime juice
- 1 tsp rice vinegar
- 1 small grated garlic clove
- 1/2 tsp fine salt, plus more to taste
- 1 tsp olive oil
Method:
1. Cook the barley. Add the barley and water or stock to a pan with a pinch of salt. Simmer for 25-30 minutes, until tender but still chewy. Drain well, return to the warm pan and cover for 5 minutes so it steams dry.
2. Roast the mushrooms. Heat the oven to 220 C / 425 F. In a large bowl, whisk miso, soy sauce, olive oil, honey, vinegar, smoked paprika and black pepper. Toss in the mushrooms until coated, then spread them across a wide lined tray. Roast for 20-25 minutes, turning once, until browned, glossy and crisp at the edges.
3. Make the cucumber yogurt. Coarsely grate the cucumber, squeeze out excess liquid, then stir it into the yogurt with lime juice, rice vinegar, garlic, salt and olive oil. Taste and adjust with more lime or salt. It should be cool, tangy and lightly pickled.
4. Build the bowls. Divide the barley between bowls. Add the roasted miso mushrooms while hot so the juices season the grains. Spoon over cucumber yogurt, then finish with scallions, sesame, herbs and lime.
5. Serve. Eat warm, with extra lime at the table. For meal prep, keep the yogurt separate and add it just before serving so the bowl stays fresh.
Tips:
- Use a wide roasting tray. Crowded mushrooms steam and stay soft.
- Add cooked chickpeas or edamame if you want extra protein.
- Leftover barley and mushrooms keep for up to 3 days in the fridge; reheat the grains and mushrooms, then add cold yogurt.
