Crispy Pesto Butter Bean Potato Trays with Lemon Rocket Salad πΏπ₯
This is the kind of tray dinner that feels generous without asking for much: crisp-edged baby potatoes, creamy butter beans, jammy cherry tomatoes, green pesto, lemon and a peppery rocket finish. It works as a vegetarian main, a warm salad, or a side for grilled chicken or fish.

Ingredients:
- 750 g / 1 lb 10 oz baby potatoes, halved
- 2 tbsp olive oil, plus 1 tbsp for finishing
- 2 garlic cloves, finely grated or minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika, optional
- Fine salt and black pepper
- 2 x 400 g / 14 oz cans butter beans, drained and patted dry
- 300 g / 2 cups cherry tomatoes
- 4 tbsp basil pesto
- 1 lemon, zested and juiced
- 60 g / 2 packed cups rocket / arugula
- 3 tbsp toasted almonds, roughly chopped
- 25 g / 1/4 cup shaved or finely grated parmesan, optional
- Optional extras: chili flakes, capers, torn basil, soft herbs or a spoon of Greek yogurt
Method:
1. Heat the oven to 220 C / 425 F. Line a large baking tray with parchment. If your tray is small, use two trays so the potatoes roast instead of steaming.
2. Toss the halved potatoes with 2 tbsp olive oil, garlic, oregano, smoked paprika if using, salt and black pepper. Spread them cut-side down where possible.
3. Roast for 22-25 minutes, until the cut sides are deeply golden and the edges are starting to crisp.
4. Add the drained butter beans and cherry tomatoes to the tray. Turn gently so the beans pick up the seasoned oil, then roast for another 12-15 minutes. The beans should look lightly golden in spots and the tomatoes should be blistered and juicy.
5. Stir pesto with lemon zest, 1 tbsp lemon juice and 1 tbsp olive oil. Spoon it over the hot tray and toss gently so it coats without crushing the beans.
6. Taste and adjust with more lemon juice, salt or black pepper. Scatter over rocket, toasted almonds and parmesan. Serve while the potatoes are crisp and the rocket is just starting to soften.
Serving tips:
- Make it more filling with a fried egg, grilled halloumi, chickpeas or extra white beans.
- For a vegan version, use dairy-free pesto and skip the parmesan.
- Add the rocket at the last moment so it stays fresh and peppery.
Storage:
- The roasted tray mix keeps for up to 3 days in the fridge.
- Reheat it in a hot oven or air fryer to bring back the crisp edges.
- Add fresh rocket, lemon and almonds after reheating, not before.
