Crispy Sesame Aubergine Chickpea Bowls with Ginger Lime Yogurt 🍆🥣 A bright, crunchy-soft veggie bowl with roasted aubergine, crisp chickpeas, fluffy rice, cool cucumber and a tangy ginger-lime yogurt. It is built for contrast: hot tray, fresh herbs, creamy sauce and sesame crunch. Yield: 3-4 servings Time: about 40 minutes Ingredients 🌿 For the tray: - 2 medium aubergines, cut into 2.5 cm cubes - 2 x 400 g cans chickpeas, drained, rinsed and dried well - 2 tbsp olive oil - 1 tbsp soy sauce - 1 tbsp runny honey or maple syrup - 1 tbsp sesame seeds, plus extra to finish - 1 tsp smoked paprika - 1/2 tsp ground cumin - 1/2 tsp chilli flakes, or to taste - 1/2 tsp fine salt - black pepper For the ginger-lime yogurt: - 250 g thick Greek-style yogurt - zest and juice of 1 lime - 1 tsp finely grated fresh ginger - 1 small garlic clove, finely grated - 2 tbsp chopped coriander or mint - 1 tsp olive oil - pinch of salt To serve: - 3-4 portions cooked jasmine rice, basmati rice or brown rice - 1 cucumber, shaved into ribbons or thin slices - extra lime wedges - extra coriander or mint - toasted sesame seeds Method 🍳 1. Heat the oven to 220C / 200C fan. Line a large tray with baking paper. Pat the aubergine cubes and chickpeas dry - this is what helps them roast instead of steam. 2. Add aubergine and chickpeas to the tray with olive oil, soy sauce, honey, sesame, paprika, cumin, chilli, salt and pepper. Toss until everything is lightly coated, then spread into one even layer. Use two trays if the pieces look crowded. 3. Roast for 25-30 minutes, turning once after about 18 minutes. The aubergine should be deeply golden at the edges and soft inside; the chickpeas should look darker, drier and a little crisp. 4. While the tray roasts, make the yogurt. Stir together yogurt, lime zest, lime juice, ginger, garlic, herbs, olive oil and salt. Taste and adjust: add more lime for sharpness, more salt for lift, or a splash of water if you want it drizzleable. 5. Spoon rice into bowls. Add cucumber ribbons, then pile the hot sesame aubergine and chickpeas over the top. Dollop or drizzle with ginger-lime yogurt. Finish with extra sesame, herbs, black pepper and lime wedges. Serving and storage tips ✨ - Best texture: serve the roasted tray hot and the yogurt cold. - Make ahead: cook rice and mix the yogurt up to 2 days ahead. - Leftovers: store the tray, rice and yogurt separately.
