Crispy Smoky Pepper Lentil Millet Cakes with Lemon Parsley Yogurt 🌶️🌿
These little cakes are built for texture: soft red lentils, nutty millet, sweet roasted peppers and smoked paprika inside, with crisp golden edges outside. The cold lemon parsley yogurt keeps everything bright and creamy without making the patties heavy. They are lovely as a main with salad, tucked into flatbreads, or packed into lunch boxes. 🧡
Yield: 10-12 small cakes, 3-4 servings
Time: about 45 minutes, plus 10 minutes chilling
Ingredients:
- 170 g red lentils, rinsed
- 1 bay leaf, optional
- 1 cup cooked millet, cooled
- 1 large roasted red pepper, finely chopped and patted dry
- 1 small garlic clove, finely grated
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Finely grated zest of 1 lemon
- 3 tbsp chopped parsley
- 55-75 g fine breadcrumbs, plus extra if needed
- 1 tbsp olive oil for the mixture
- 2-3 tbsp olive oil for frying
- Salt and black pepper
Lemon parsley yogurt:
- 1 cup thick Greek-style yogurt
- 1 small garlic clove, finely grated
- 1 tbsp lemon juice
- 1 tsp finely grated lemon zest
- 2 tbsp chopped parsley
- 1 tsp olive oil
- Pinch of salt
Method:
1. Put the lentils in a small pan with plenty of water, the bay leaf if using, and a good pinch of salt. Simmer for 12-15 minutes until the lentils are very soft but not watery. Drain well, discard the bay leaf, then let the lentils steam-dry for 5 minutes.
2. In a bowl, mash the warm lentils until thick and paste-like. Stir in the cooked millet, chopped roasted pepper, garlic, smoked paprika, cumin, lemon zest, parsley, olive oil, salt and black pepper.
3. Add 55 g breadcrumbs and mix. The mixture should be moist but shapeable. If it slumps, add more breadcrumbs 1 tablespoon at a time. Chill for 10 minutes so the millet and crumbs hydrate. 🌿
4. Shape into 10-12 small cakes, about 6 cm wide. Press the edges firmly so they do not crumble in the pan.
5. Heat olive oil in a wide non-stick or well-seasoned pan over medium heat. Fry the cakes for 3-4 minutes per side, turning gently, until they are deeply golden with crisp edges. Work in batches if needed so the pan is not crowded.
6. Stir together the yogurt, garlic, lemon juice, lemon zest, parsley, olive oil and salt. Taste and adjust with more lemon or salt.
7. Serve the hot cakes with roasted pepper strips, spoonfuls of lemon parsley yogurt, extra parsley and a few cracks of black pepper. Add salad leaves, cucumber or warm flatbreads if you want a fuller plate.
Serving and storage tips:
- Keep the yogurt separate until serving so the cakes stay crisp.
- Reheat leftover cakes in a dry pan or on a tray at 200 C / 400 F for 8-10 minutes.
- If you want extra crunch, coat the shaped cakes lightly in more breadcrumbs before frying.
- The mixture can be shaped a few hours ahead and kept covered in the fridge.
