Crispy Tomatillo Millet Corn Cakes with Lime Oregano Yogurt 🌽🌿
These small millet corn cakes are crisp on the outside, tender in the middle and brightened with roasted tomatillos. The grain gives a nutty chew, corn adds sweetness, and the cold lime oregano yogurt makes each bite feel fresh instead of heavy. They are great for a vegetarian lunch, snack plate, brunch side or a make-ahead tray with salad. ✨

For the roasted tomatillos:
- 350 g tomatillos, husks removed, rinsed and quartered
- 1 tbsp olive oil
- 1/4 tsp fine sea salt
- pinch of black pepper
- 1 tsp lime juice
For the millet corn cakes:
- 2 cups cooked millet, cooled
- 1 cup corn kernels, fresh, frozen and thawed, or drained canned corn
- 2 scallions, finely sliced
- 1 garlic clove, finely grated
- 1 large egg
- 4 tbsp chickpea flour, plus 1 tbsp more if needed
- 2 tbsp chopped coriander or parsley
- 1 tsp dried oregano, or 1 tbsp fresh oregano
- 1/2 tsp ground cumin
- 1/2 tsp fine sea salt
- 1/4 tsp smoked paprika, optional
- black pepper
- 2-3 tbsp olive oil, for frying
For the lime oregano yogurt:
- 220 g thick Greek-style yogurt
- 1 tsp lime zest
- 2 tsp lime juice, plus more to taste
- 1 tbsp chopped fresh oregano, coriander or parsley
- 1 tsp olive oil
- 1/4 tsp fine sea salt
- black pepper
To finish:
- toasted pumpkin seeds
- extra herbs
- lime wedges
- a spoon of the reserved roasted tomatillos
- crisp lettuce, cucumber or tomato salad on the side
Method 🥣
1. Heat the oven to 220 C / 425 F. Line a small tray with baking parchment.
2. Toss tomatillos with olive oil, salt and pepper. Roast for 15-18 minutes, until they collapse, lightly char at the edges and release a tangy green juice. Cool for 5 minutes, then chop roughly. Stir in the lime juice.
3. Put the cooked millet in a mixing bowl. If it is clumpy from the fridge, break it up with a fork so the cakes hold together evenly.
4. Add corn, scallions, garlic, egg, chickpea flour, herbs, oregano, cumin, salt, smoked paprika if using and black pepper. Fold in about half of the roasted tomatillos. The mixture should be moist but shapeable. If it feels loose, add another tablespoon of chickpea flour and rest for 10 minutes.
5. Shape into 12 compact cakes, about 6 cm wide. Press them firmly so the millet and corn bind, then place them on a tray while the pan heats.
6. Warm a thin layer of olive oil in a non-stick or cast-iron skillet over medium heat. Cook the cakes in batches for 3-4 minutes per side. Do not move them too early; the first side should be deeply golden before flipping.
7. Transfer cooked cakes to a rack or warm tray so the edges stay crisp. Add a little more oil between batches if the pan looks dry.
8. Stir yogurt with lime zest, lime juice, herbs, olive oil, salt and black pepper. Taste and add more lime if you want a sharper finish. The sauce should be cold, thick and bright.
9. Serve the hot cakes with lime oregano yogurt, the remaining roasted tomatillo spoon, pumpkin seeds, extra herbs and lime wedges. The best bite has a crisp golden edge, sweet corn, tangy tomatillo and a cool creamy finish. 🍽️
Serving and storage tips:
- Cooked millet from the fridge works well because it is drier and easier to shape.
- If using frozen corn, thaw and pat it dry before mixing.
- The cake mixture can be shaped a few hours ahead and chilled.

- Store the yogurt separately and add it just before serving.
