This is a tray-bake bowl built around high contrast: sweet roasted carrot batons, crisp chickpeas, torn pita chips, cool cucumber, herbs and a lemony yogurt-tahini drizzle. The key is drying the chickpeas thoroughly and adding the pita only at the end so it crisps without burning.

Crispy Za'atar Carrot Chickpea Pita Bowls ๐ฅ๐ฟ
Sweet roasted carrots, crunchy chickpeas, torn pita chips and a lemony yogurt-tahini drizzle make this the kind of bowl that feels fresh, warm and properly satisfying. It is built from simple pantry ingredients, but the texture does the work: caramelized carrot edges, crisp chickpeas, cool cucumber and creamy sauce in every forkful.

Ingredients ๐งบ
- 700 g carrots, cut into long batons
- 2 x 400 g cans chickpeas, drained, rinsed and patted very dry
- 3 tablespoons olive oil
- 2 teaspoons za'atar, plus extra to finish
- 1 tablespoon sesame seeds
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 teaspoon fine sea salt, divided
- Black pepper
- 2 large pita breads, torn into bite-size pieces
- 1 large cucumber, shaved into ribbons or thin half-moons
- 20 g parsley, roughly chopped
- 12 g mint leaves, torn
- 1 lemon, cut into wedges
Lemony yogurt-tahini drizzle ๐ฅฃ
- 180 g thick plain yogurt
- 2 tablespoons tahini
- 1 small garlic clove, finely grated
- 1 tablespoon lemon juice, plus more to taste
- 1 teaspoon honey or maple syrup
- 2 to 4 tablespoons cold water
- Pinch of salt
Method ๐ฉโ๐ณ
1. Heat the oven to 220C / 425F. Line a large tray with parchment. Pat the chickpeas very dry so they can crisp instead of steaming.
2. Toss the carrots and chickpeas with olive oil, za'atar, sesame, cumin, paprika, 3/4 teaspoon salt and plenty of black pepper. Spread everything out in one layer. Roast for 24 to 28 minutes, turning once, until the carrots are tender with browned edges and the chickpeas look golden.
3. Scatter the torn pita onto the tray, toss lightly through the seasoned oil, and roast for another 6 to 8 minutes. The pita should be crisp at the corners but not burnt. If your tray is crowded, move the pita to a second tray for better crunch.
4. While the tray roasts, whisk the yogurt, tahini, garlic, lemon juice, honey and a pinch of salt. Add cold water one spoonful at a time until it becomes thick but pourable. Taste and brighten with more lemon if needed.
5. Build the bowls with cucumber, roasted carrots, crisp chickpeas and pita chips. Spoon over the yogurt-tahini drizzle, then finish with parsley, mint, extra za'atar, sesame and lemon wedges.
Serving and storage tips โจ
Serve while the pita is still crisp. The roasted carrots and chickpeas keep well for 3 days in the fridge, but store the pita chips separately at room temperature. Reheat the roasted mix on a tray at 200C / 400F for 8 to 10 minutes, then add fresh cucumber, herbs and sauce just before eating.
