Curry-Lime Pub Nut Crunch with sesame and cashews ๐ฅ๐
A glossy, golden snack mix for drinks night, movie bowls, lunchbox extras, or a quick edible gift. The nuts roast in a curry-lime glaze until crisp at the edges, then cool into little sesame-speckled clusters.

Time: 10 minutes prep, 15 minutes roasting, 20 minutes cooling

- 1 cup raw or roasted unsalted cashews
- 1 cup unsalted peanuts
- 2 tbsp sesame seeds
- 1 tbsp honey or maple syrup
- 1 tbsp neutral oil
- 1 1/2 tsp mild curry powder
- 1/2 tsp smoked paprika
- 1/2 tsp fine sea salt, plus extra to finish if needed
- 1/4 tsp garlic powder
- pinch of chilli flakes, or more if you like heat
- finely grated zest of 1 lime
- 1 tsp fresh lime juice
- optional: 1 tsp brown sugar for a slightly stickier glaze
- optional finish: extra lime zest and a small pinch of flaky salt
Method ๐ฉโ๐ณ
1. Heat the oven to 170C / 340F. Line a baking tray with parchment so the glaze does not stick.
2. In a large bowl, stir together the honey or maple syrup, oil, curry powder, smoked paprika, salt, garlic powder, chilli flakes, lime zest, and lime juice. It should look glossy and slightly loose.
3. Add the cashews and peanuts. Toss for 1-2 minutes, scraping the bowl, until every nut has a thin coating of spice glaze.
4. Spread the nuts on the tray in a single layer. If they are piled too thickly, they steam instead of crisp.
5. Roast for 14-16 minutes, stirring after 7 minutes and again near the end. They are ready when the cashews are deep golden, the glaze looks tacky, and the kitchen smells toasty.
6. Sprinkle over the sesame seeds during the last 2 minutes of roasting so they toast without burning.
7. Leave the nuts on the tray until fully cool. This is when the glaze sets crisp. Break up any large clusters with your fingers or a spoon.
8. Taste once cool and add a tiny pinch of flaky salt or fresh lime zest if the flavor needs lifting.

- Warm nuts may feel a little sticky; they crisp as they cool.
- If the glaze pools, spread the nuts out and roast for 2 extra minutes.
- If using already roasted nuts, check early because they brown faster.
