Dark Ginger-Coconut Biscuit Truffles 🍫🥥
These no-bake truffle bites are rich, chewy, and a little sparkly from crystallized ginger. Crushed biscuits give them a gentle crunch, dark chocolate makes the center fudgy, and coconut keeps the finish light enough for a snack tray, tea plate, or edible gift box.

Ingredients 📝
- 200 g plain tea biscuits, digestives, or graham crackers, crushed into fine crumbs with a few small pieces
- 120 g dark chocolate, chopped
- 45 g unsalted butter
- 3 tbsp heavy cream or coconut cream
- 2 tbsp maple syrup or honey
- 2 tbsp unsweetened cocoa powder
- 55 g desiccated coconut, plus extra for coating
- 35 g crystallized ginger, finely chopped
- 1/2 tsp vanilla extract
- 1/4 tsp fine sea salt
- optional: 1/4 tsp ground ginger for extra warmth
- optional coating: cocoa powder, toasted coconut, or a mix of both
Method 👩🍳
1. Crush the biscuits. Aim for mostly fine crumbs with a few pea-size pieces so the truffles have a proper biscuit bite.
2. Melt the chocolate, butter, cream, maple or honey, cocoa, vanilla, salt, and optional ground ginger in a heatproof bowl over barely simmering water, or in short microwave bursts. Stir until smooth and glossy.
3. Fold in the biscuit crumbs, desiccated coconut, and crystallized ginger. The mixture should look thick, shiny, and slightly sticky. If it feels too loose, add 1-2 tbsp more biscuit crumbs; if it feels dry, add 1 tsp cream.
4. Chill the bowl for 25-35 minutes, until the mixture is firm enough to scoop but not rock hard.
5. Scoop teaspoons of mixture and roll into small balls. Roll each one in coconut, cocoa, or toasted coconut.
6. Chill the truffles for at least 30 minutes until set.

- Warm mixture will feel soft and sticky; it firms as the chocolate sets.
- A few biscuit pieces are good because they make the center more interesting.
- If rolling gets messy, rinse and dry your hands between batches or chill the mixture for another 10 minutes.
