Golden Miso Corn Butter Rice Bowls ๐ŸŒฝ๐Ÿš This is the kind of bowl that feels bright, buttery and comforting at the same time: warm rice, golden corn tossed through miso butter, cool cucumber, scallions, sesame and lime. It is simple enough for a weekday but has that glossy little "one more spoonful" finish. ๐Ÿ‹ Yield: 4 bowls Time: 10 minutes prep, 12 minutes cooking Ingredients ๐Ÿงพ For the bowls: - 3 cups cooked short-grain rice, warm - 2 cups fresh or frozen corn kernels - 1 tbsp neutral oil - 2 tbsp unsalted butter - 1 1/2 tbsp white miso - 1 tbsp soy sauce - 1 tsp honey or maple syrup - 1 tsp rice vinegar - 1 small garlic clove, finely grated - 1 tsp finely grated lime zest - 1-2 tbsp hot water, as needed For serving: - 1 small cucumber, shaved into ribbons or thin half-moons - 3 scallions, finely sliced - 1 tbsp toasted sesame seeds - 1 lime, cut into wedges - 2 tbsp chopped coriander or parsley, optional - chilli crisp, sriracha or toasted chilli flakes, optional Method ๐Ÿ‘ฉโ€๐Ÿณ 1. Mix the sauce. In a small bowl, stir the white miso, soy sauce, honey, rice vinegar, grated garlic and lime zest until smooth. It should taste salty, lightly sweet and bright. 3. Cook the corn. Heat the oil in a wide skillet over medium-high heat. Add the corn and cook for 4-5 minutes, stirring now and then, until a few edges turn golden and the corn smells sweet. 4. Make it glossy. Lower the heat to medium. Add the butter and let it melt around the corn, then stir in the miso mixture. Cook for 1-2 minutes, tossing constantly, until the corn is shiny and coated. If the pan looks dry or the sauce tightens too quickly, add 1 tbsp hot water and stir until silky. 5. Build the bowls. Divide the warm rice between bowls. Spoon the golden miso corn over the top, then add cucumber, scallions, sesame seeds, herbs if using, and a squeeze of lime. 6. Finish and serve. Add chilli crisp or chilli flakes for heat.
