Golden Persimmon Barley Pita Crisps with Sesame Labneh 🧡🌿 This is a bright sweet-savoury bowl with roasted persimmons, chewy lemony barley, crisp pita shards and cool sesame labneh. The persimmons soften and turn glossy in the oven, the barley catches the warm roasting juices, and the pita gives the whole plate a proper crunchy finish. Yield: 3-4 servings Time: about 40 minutes Ingredients For the roasted persimmons: - 4 ripe but firm persimmons, cut into 8 wedges each - 1 1/2 tbsp olive oil - 1 tsp honey or maple syrup - 1/2 tsp ground cumin - 1/4 tsp smoked paprika, optional - 1/2 tsp fine sea salt - Black pepper For the barley and pita: - 520 g cooked pearl barley, warm or room temperature - 2 pita breads or small flatbreads, torn into rough shards - 1 1/2 tbsp olive oil for the pita - 1 tbsp lemon juice, plus extra to taste - 1 tsp lemon zest - 2 tbsp chopped parsley or coriander - 2 tbsp chopped pistachios or toasted almonds - 1 tbsp toasted sesame seeds - Pinch of salt For the sesame labneh: - 240 g thick labneh or Greek-style yogurt - 1 tbsp tahini - 1 tsp toasted sesame oil - 1 small garlic clove, finely grated - 1 tbsp lemon juice - 1 tsp honey or maple syrup - 1-2 tbsp cold water, only if needed - Pinch of salt To serve: - Extra herbs - Extra sesame seeds - Lemon wedges - A small drizzle of olive oil or chilli oil, optional Method 1. Heat the oven to 220 C / 425 F. Line a wide tray with baking paper. The tray should be roomy enough for the persimmons to roast rather than steam. 2. Roast the persimmons. Toss the wedges with olive oil, honey, cumin, smoked paprika if using, salt and black pepper. Spread them cut side down and roast for 16-20 minutes, turning once, until the edges are lightly caramelised and the centres look glossy but still hold their shape. 3. Crisp the pita. On a second tray, toss torn pita with olive oil and a small pinch of salt. Bake for 7-10 minutes, turning once, until golden and dry at the edges. Let it cool on the tray so it stays crisp. 4. Dress the barley. Put the warm barley in a bowl with lemon zest, lemon juice, herbs, sesame seeds and a spoonful of the warm juices from the persimmon tray. Toss well and taste. Add a little more lemon or salt if the barley tastes flat. 5. Make the sesame labneh. Stir labneh or thick yogurt with tahini, sesame oil, garlic, lemon, honey and salt. Add only enough cold water to make it spoonable. Keep it thick because it should sit in ribbons over the barley, not disappear into it. 6. Assemble. Spoon the barley into shallow bowls.
