Gooseberry Ginger Trifle Cups 🍊🥄
Tart fruit, cool custard, soft cream and ginger biscuit crunch in small make-ahead dessert cups. These are bright, creamy and easy to assemble, with the gooseberries doing the work of keeping everything fresh instead of heavy.
Yield: 4 small cups
Time: 25 minutes active, plus 30 minutes chilling
Ingredients 🛒
- 300 g gooseberries, topped and tailed, fresh or frozen
- 3 tbsp honey, caster sugar or maple syrup, plus more to taste
- 1 tsp finely grated orange zest
- 2 tbsp orange juice or water
- 1 tsp finely grated fresh ginger, or 1/2 tsp ground ginger
- Pinch of salt
- 250 ml chilled vanilla custard, ready-made or homemade
- 150 ml double cream or whipping cream
- 1 tsp icing sugar, optional
- 10-12 ginger biscuits, crushed into rough crumbs
- 30 g toasted flaked almonds
- Mint leaves and extra orange zest, to finish
Method 👇
1. Make the compote.
Add gooseberries, honey or sugar, orange zest, orange juice, ginger and salt to a small pan. Simmer over medium heat for 5-7 minutes, stirring gently, until the berries soften and some burst. Keep it textured and spoonable rather than cooking it down into a thick jam.
2. Balance and cool.
Taste the compote. Gooseberries should stay pleasantly tart, but if they are very sharp, add another small spoon of honey or sugar. Let it cool for 10 minutes, then chill if you have time.
3. Prepare the cream.
Whip the cream with icing sugar, if using, until it forms soft peaks. Stop while it is still loose and spoonable, so it sits gently over the custard instead of feeling stiff.
4. Crush the biscuits.
Break the ginger biscuits into mixed crumbs. A combination of fine crumbs and a few larger crunchy pieces gives the best trifle texture.
5. Layer the cups.
Add a spoon of ginger biscuit crumbs to each glass or jar. Follow with chilled custard, gooseberry compote and whipped cream. Repeat the layers if your glasses are tall.
6. Chill and finish.
Chill for at least 30 minutes so the layers settle. Just before serving, add toasted almonds, mint, extra orange zest and a final pinch of biscuit crumb for crunch.
Serving notes 🌿
- Serve cold after a short chill.
- Assemble up to 6 hours ahead, but add almonds, mint and final crumbs at the last minute.
- If gooseberries are hard to find, try tart plums, rhubarb or blackcurrants.
