Herb Garden Vinegar Tomato Bean Toasts 🍅🌿 This is the kind of fresh lunch that feels simple but tastes layered: juicy tomatoes, creamy white beans, crunchy sourdough and a green herb vinegar that wakes everything up. Make the herb vinegar once and it becomes a little fridge shortcut for salads, grilled vegetables, sandwiches and snack plates too. Yield: 4 generous toasts, serving 2 as lunch or 4 as appetisers Time: 15 minutes prep, 8-10 minutes resting, 5 minutes to toast Ingredients 📝 For the herb garden vinegar: - 3 tbsp red wine vinegar or white wine vinegar - 4 tbsp extra virgin olive oil - 1 tsp Dijon mustard - 1 tsp honey or maple syrup - 1 tsp finely grated lemon zest - 1 small garlic clove, finely grated - 3 tbsp finely chopped parsley - 2 tbsp finely chopped basil - 1 tbsp finely chopped chives - Fine salt and black pepper For the toasts: - 4 thick slices sourdough or country bread - 1 tbsp olive oil, plus extra for brushing - 10 oz / 280 g ripe cherry tomatoes or chopped mixed tomatoes - 1 can white beans, about 14 oz / 400 g, drained and rinsed - 1 tsp lemon juice, plus more to taste - 1 small handful basil leaves - Flaky salt - Optional: torn mozzarella, feta or soft goat cheese Method 🍞 1. Make the herb vinegar. Whisk the vinegar, olive oil, Dijon, honey, lemon zest, grated garlic, a pinch of salt and black pepper until glossy. Stir in the parsley, basil and chives. Let it stand for 10 minutes so the herbs flavour the vinegar. 2. Marinate the tomatoes and beans. Halve or chop the tomatoes, then fold them with the white beans, lemon juice and about half of the herb vinegar. Rest for 8-10 minutes. The tomatoes should become juicy and shiny, but not collapse into a sauce. 3. Toast the bread. Toast or griddle the sourdough until deeply golden, crisp at the edges and still slightly chewy in the middle. Brush with a little olive oil. If you like a stronger savoury base, rub the hot toast lightly with a cut garlic clove. 4. Taste and adjust. Add a pinch more salt, a squeeze of lemon or a tiny drizzle of honey if the tomatoes need balancing. The topping should taste bright, herby and lightly tangy. 5. Assemble. Spoon the tomato-bean mixture generously over each toast. Drizzle with extra herb vinegar, scatter over basil leaves and finish with flaky salt and black pepper. Add mozzarella, feta or goat cheese if you want a richer plate. Serving and storage tips ✨ - Serve straight away so the toast stays crisp. - The herb vinegar keeps for 3 days in the fridge.
