Honey Lime Melon Feta Cups

Ingredients

  • 3 cups chilled watermelon and cantaloupe, cut into 3/4-inch cubes or melon balls
  • 1 cup thin cucumber half moons
  • 3/4 cup crumbled feta
  • 2 tablespoons small mint leaves or torn mint
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 2 teaspoons honey
  • 1 tablespoon extra-virgin olive oil
  • 1 small pinch chili flakes, optional
  • Freshly ground black pepper
  • Flaky salt only if your feta is mild

Method

  1. Chill the melon before cutting if possible. Cold fruit keeps the cups crisp, juicy, and refreshing.
  2. Cut watermelon and cantaloupe into even bite-size pieces. Slice cucumber thinly so it folds easily into the cups.
  3. Whisk lime juice, lime zest, honey, olive oil, chili flakes, and black pepper until glossy. Taste it before adding salt because feta can be salty.
  4. Toss melon and cucumber with about half of the dressing. Use a wide bowl and a gentle folding motion so the melon stays neat.
  5. Spoon the mixture into small glasses, ramekins, or shallow appetizer bowls.
  6. Add crumbled feta and mint on top. Drizzle with the remaining dressing right before serving.
  7. Serve cold. If the cups sit for more than 20 minutes, spoon off any extra juice before topping with more mint.
