Lavender Rose Spice Shortbread Dippers πΈπͺ
Buttery shortbread fingers with a delicate floral lift, warm spice, lemon zest, and a cool vanilla yogurt dip. This is a small tea-time bake that feels special without becoming fussy: crisp at the edges, tender in the middle, and gently fragrant rather than perfume-heavy.

Ingredients π§
For the shortbread:
- 180g plain flour
- 40g rice flour or cornflour
- 125g cold unsalted butter, cubed
- 55g caster sugar
- 1 tsp finely grated lemon zest
- 1/2 tsp ground cardamom
- 1/4 tsp ground cinnamon
- 1 tsp culinary lavender, lightly crushed
- 1 tbsp dried edible rose petals, lightly crushed
- 1/4 tsp fine salt
- 1-2 tsp cold water, only if needed
For the vanilla yogurt cream:
- 150g thick Greek yogurt
- 1 tbsp runny honey
- 1/2 tsp vanilla extract or vanilla bean paste
- tiny pinch of fine salt
- extra crushed edible rose petals or lavender, optional, for finishing

1. Prepare the tray. Line a baking tray with parchment. Heat the oven to 160C fan / 180C / 350F. If your kitchen is warm, keep the butter in the fridge until the moment you use it.
2. Make the crumb. Put the plain flour, rice flour or cornflour, caster sugar, lemon zest, cardamom, cinnamon, crushed culinary lavender, crushed rose petals and salt in a bowl. Add the cold butter cubes and rub them in with your fingertips until the mixture looks like fine sandy crumbs with a few tiny buttery flakes.
3. Bring it together. Squeeze the crumbs gently until they form a dough. If the mixture is too dry to hold, add 1 teaspoon cold water, then a second only if needed. Do not knead heavily; shortbread stays tender when handled lightly.
4. Chill and shape. Pat the dough into a flat rectangle, wrap or cover, and chill for 25 minutes. Roll or press it to about 1cm thick, then cut into neat fingers. Move them to the lined tray with a little space between each piece.
5. Bake gently. Bake for 16-19 minutes until the edges are pale gold and the centres still look light. The dippers will firm as they cool, so avoid baking them dark.
6. Cool completely. Leave on the tray for 8-10 minutes, then transfer carefully to a rack. Wait until fully cool before dipping, otherwise the texture will feel soft instead of crisp-tender.
7. Make the dip. Stir the Greek yogurt, honey, vanilla and a tiny pinch of salt until glossy. Spoon into a small bowl and finish with a few crushed edible petals if you like.

The dough should press together without feeling sticky. The baked shortbread should be pale, buttery and crisp at the edges, with a tender snap through the centre. The floral flavour should be quiet and clean, not strong or soapy.
Serving and storage π½οΈ
Serve with tea, coffee, berries, poached fruit, or a simple dessert board. Keep the shortbread in an airtight tin for up to 5 days. Store the yogurt dip separately in the fridge for up to 2 days and stir before serving.
