🍋 Lemon-Pistachio Jewel Squares with Rosewater Dust Bright, glossy little dessert squares with a soft jelly chew, fresh lemon flavor, pistachio crunch, and just a whisper of rosewater. They are lovely for tea, edible gifts, small dessert plates, or a make-ahead sweet bite after dinner. Yield: 24-30 small squares Time: 20 minutes active, plus 3-4 hours chilling 🛒 Ingredients - 180 ml fresh lemon juice, strained - Finely grated zest of 2 lemons - 220 g caster sugar - 180 ml water - 2 tbsp honey or light golden syrup - 1/4 tsp fine salt - 18 g powdered gelatin, bloomed in 80 ml cold water - 1/2 tsp rosewater, or less to taste - 120 g shelled pistachios, finely chopped - 2 tbsp powdered sugar - 1 tsp cornstarch - Optional: a tiny pinch of dried edible rose petals, crushed very finely 👩‍🍳 Method 1. Line a small square tin or loaf tin with parchment, leaving overhang so the set slab lifts out cleanly. 2. Put lemon juice, lemon zest, sugar, water, honey, and salt in a saucepan. Warm over medium heat, stirring until the sugar dissolves. Let it bubble gently for 4-5 minutes, until the syrup smells bright and the zest softens. 3. Remove the pan from the heat. Add the bloomed gelatin and whisk until fully dissolved. Stir in the rosewater carefully - start small, taste the aroma, and keep it delicate rather than perfumed. 4.
