Sweet-Sour Winter Cabbage with Apple & Mustard Glaze 🍎🥬
This is the kind of winter side that quietly makes the whole plate better: glossy red cabbage, soft apple ribbons, warm mustard, cider vinegar and just enough brown sugar to round the edges. It is bright, cozy and very make-ahead friendly.

Ingredients 🛒
- 1 medium red cabbage, about 850 g, finely shredded
- 1 large red onion, thinly sliced
- 1 large crisp apple, cored and thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 3 tbsp cider vinegar, plus a little extra to finish
- 1 1/2 tbsp wholegrain mustard
- 1 tbsp light brown sugar
- 1 bay leaf
- 1 tsp fresh thyme leaves, or 1/2 tsp dried thyme
- 1/2 tsp fine salt, plus more to taste
- 1/2 tsp black pepper
- 1/3 cup water or light vegetable stock
- Optional to serve: chopped parsley, roast potatoes, sausages, pork, chicken, mushrooms or a grain bowl base
Method 👩🍳
1. Prepare the cabbage. Remove any tired outer leaves, quarter the cabbage, cut out the tough core and shred it finely. Keep the slices fairly even so they soften at the same pace.
2. Start the aromatics. Warm the butter and olive oil in a wide heavy pan over medium heat. Add the red onion with a pinch of salt and cook for 5-6 minutes, stirring often, until glossy and beginning to soften.
3. Add cabbage and apple. Stir in the shredded cabbage and sliced apple. Cook for 4-5 minutes, turning everything through the buttery onions, until the cabbage starts to relax and brighten.
4. Build the glaze. Stir in cider vinegar, wholegrain mustard, brown sugar, bay leaf, thyme, salt, pepper and water or stock. The pan should smell sharp-sweet and mustardy, with a little liquid visible at the base.
5. Braise gently. Cover the pan, lower the heat and cook for 28-35 minutes, stirring every 8-10 minutes. The cabbage should become silky and tender but not mushy. Add a splash more water if the pan looks dry before the cabbage is soft.
6. Make it glossy. Remove the lid for the final 4-6 minutes and stir often so the juices reduce into a shiny glaze that clings to the cabbage. Discard the bay leaf.
7. Balance and serve. Taste carefully. Add a tiny splash of cider vinegar if it needs brightness, a pinch more sugar if it is too sharp, or extra pepper if you want more warmth. Finish with parsley if using.
Serving notes 🍽️
Serve warm with roast potatoes, sausages, pork, chicken, seared mushrooms or a grain bowl. It is also excellent tucked into toasted sandwiches with sharp cheese.
Make-ahead and storage 📌
This cabbage keeps well for 3 days in the fridge. Reheat gently in a covered pan or microwave, adding a spoonful of water if needed. The flavor gets deeper overnight, so it is a strong make-ahead side for busy dinners.
