Turmeric Ginger Lentil Vegetable Bowls πΏπ
A golden, cozy bowl with enough freshness to keep it light. Red lentils cook down into a creamy turmeric-ginger base with tomato, carrot, pepper, and spinach, then everything is spooned over warm rice or grains and finished with lime, herbs, yogurt, and crispy onions.

For the lentils:
- 1 cup red lentils, rinsed until the water runs mostly clear
- 1 tablespoon olive oil or neutral oil
- 1 medium onion, finely chopped
- 2 carrots, diced small
- 1 red pepper, diced small
- 3 garlic cloves, finely grated or minced
- 1 tablespoon fresh ginger, finely grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika or mild chilli flakes, optional
- 2 medium tomatoes, chopped, or 1 cup canned chopped tomatoes
- 3 cups vegetable stock or water
- 2 handfuls baby spinach
- 1 tablespoon lime or lemon juice, plus extra wedges for serving
- Salt and black pepper
For serving:
- 3 cups warm cooked rice, quinoa, couscous, or mixed grains
- 1/2 cup Greek yogurt or coconut yogurt
- 2 tablespoons chopped coriander or parsley
- 2 tablespoons toasted seeds, sesame, or chopped cashews
- Crispy onions or toasted breadcrumbs, optional
- Extra lime or lemon wedges

1. Rinse the red lentils well, then drain. This helps the finished bowl taste clean and keeps the texture creamy rather than dusty.
2. Warm the oil in a wide saucepan over medium heat. Add the onion, carrot, and red pepper with a good pinch of salt. Cook for 6-8 minutes, stirring often, until the vegetables soften and the onion smells sweet.
3. Add the garlic, ginger, turmeric, cumin, and optional paprika or chilli. Stir for 45-60 seconds. The spices should smell warm and fragrant but not darken too much.
4. Stir in the tomatoes, lentils, and stock. Bring to a gentle boil, then reduce to a steady simmer. Cook for 18-20 minutes, stirring every few minutes, until the lentils collapse into a creamy sauce and the carrots are tender.
5. Adjust the texture. If the lentils look too thick, add a splash of hot water. If they look loose, simmer uncovered for 2-3 minutes more. The final texture should spoon softly over rice without running like soup.
6. Stir in the spinach until just wilted, then add lime or lemon juice. Taste and adjust with salt, pepper, or a little more citrus.
7. Build the bowls. Add warm rice or grains, spoon over the turmeric-ginger lentils, then finish with yogurt, herbs, toasted seeds, crispy onions, and lime wedges.

For a richer bowl, add roasted cauliflower, crispy tofu, grilled chicken, or a soft-boiled egg. For a dairy-free version, use coconut yogurt or skip the yogurt and add extra lime with a drizzle of olive oil.
