Vanilla Orchard Fruit Yogurt Jars 🍐🍎🥄 Soft orchard fruit in a light vanilla syrup, layered with thick yogurt, toasted oats, and nuts. It works as a make-ahead breakfast, a brunch jar, or a not-too-heavy dessert. Yield: 4 jars Time: 30 minutes, plus cooling Ingredients For the vanilla orchard fruit: - 2 firm pears, peeled if desired, cored and cut into small wedges - 2 crisp apples, cored and cut into small wedges - 2 plums or 3 apricots, pitted and cut into wedges - 3/4 cup water - 1/3 cup honey or light brown sugar - 1 tbsp lemon juice - 2 strips lemon peel - 1 vanilla pod, split, or 2 tsp vanilla extract - 1 small pinch fine salt For the jars: - 2 cups thick Greek yogurt or skyr - 1 cup toasted oats, granola, or crisp muesli - 2 tbsp toasted almonds or hazelnuts, chopped - 1 tsp lemon zest - Mint leaves, optional - Extra honey, optional Method 1. Make the syrup 🍯 Put the water, honey or brown sugar, lemon juice, lemon peel, vanilla pod, and salt into a medium saucepan. Bring to a gentle simmer and stir until the sweetener dissolves. 2. Poach the firmer fruit 🍏 Add the pears and apples first. Simmer gently for 7-9 minutes, turning once or twice.
